It’s getting to be that time of year! And due to increasing global temperatures as a direct result of our obtuse ignorance of the damage mankind has done to the environment it’s going to be HOT HOT HOT! Cool down and refresh with these summer salads that are sure to delight.

Chickpea

A summer classic, chickpea salad adds that little boost of protein to keep up your energy so you can outrun your own thoughts! “I prefer to call them garbanzo beans” you’re thinking to yourself. Well, we aren’t going to be so focused on semantics when all the water is evaporated by the sun and the humble, sustainable chickpea is all we have left. I mean…yay summer! Omg pool party!

Greek Crumbly Feta

The kalamata olives in this salad match perfectly with the crumbling sense of safety feta. Cheese. Feta cheese. Everything is fine.
